This process, through the sudden heating and cooling of tuber fruits, achieves rapid expansion and contraction of the fruit and vegetable skin, breaking the adhesion between the skin and the flesh, and forcing the skin to separate from the flesh. At the moment it rapidly empties and returns to normal pressure, the saturated water vapor suddenly expands, "separating" the epidermis from the meat, achieving the effect of puffing and peeling.

Only the skin is separated under the effect of high temperature and high pressure, but the meat quality still maintains its original temperature and retains its original flavor. Also, because the cooking tank is supported by a stirrer, the rotating stirrer ensures that the tuber fruits inside the tank are heated evenly, preventing the meat from being burned, and it also makes the feeding and discharging of materials convenient and easy.
