What's the usage of the machine?
Chocolate Conche Refiner Machine are mainly used to grind mixed raw materials (cocoa mass, sugar, cocoa butter/cocoa butter substitutes, milk powder, etc.) to extremely fine particle size (usually below 15-25 microns), and complete key physical and chemical changes in the process, ultimately giving chocolate a silky and delicate taste, rich flavor and stable texture.

How the machine works?
The mixed chocolate raw materials are conveyed to the feeding gap between the two top rollers. The rollers rotate at different speeds, and the materials are brought into the tiny gap between the adjacent rollers. Due to the different rotation speeds of the rollers, a strong shear force is generated in the gap. At the same time, the materials are subjected to a huge extrusion effect in the gap. After repeated grinding, solid particles (especially sugar particles) are continuously broken into smaller particles under strong shear and extrusion.


At the same time, cocoa butter and other liquid ingredients are "squeezed" out, wrapped on the surface of solid particles, and all ingredients are vigorously mixed evenly.The huge friction heat generated during the grinding process is taken away by the water cooling system inside the drum, ensuring that the temperature is maintained in the ideal range of around 50-60°C to prevent flavor loss or destruction of the oil crystal form.
